When we focus
on the Pedroñeras purple garlic, we must say
that this variety is the most appreciated by farmers
and dealers in Spain and, specially, by farmers in
La Mancha Baja area. In 1988 garlic grown in this
land was described as the favourite purple garlic
since it is provided with some special characteristics
just like large head size, large cloves even in non-high
quality garlic heads.
Its resistance capacity to manufacturing process in
the factory spot is remarkable, even though garlic
is a vegetable likely to be damaged all through the
after-harvest process, because of its high water composition.
Garlic is sowed into the ground by digging a dug mechanically
or by hand.
Climate and the soil must be taken into consideration,
because later they depend on harvesting and preserving
in storage. After harvesting, manufacturing is carried
out. By manufacturing garlic is split up into two
groups: bulbs for consumption and bulbs for seeding.
